Tagliolini in a Shallots Sauce


Ingredients (for 4 people):

400g tagliolini
3 finely chopped shallots
4 ripe red tomatoes
olive oil

Preparation (medium):
Wash and peel the tomatoes and drop them in plenty of boiling water. Brown some finely chopped shallots with 4 spoonfuls of olive oil, then add the diced tomatoes, allow them to brown for 10 minutes and season with salt and pepper to taste. Cook tagliolini in plenty of salted water, drain and pour them over the sauce. Sauté the tossed pasta for 10 minutes.
