Ingredients (for 6 people):
1 lt milk,
100g semolina,
50g sugar,
3 eggs,
the grated rind of 1 lemon,
a pinch of sodium bicarbonate.
To fry:
oil or lard.
Preparation (medium):
Mix semolina, milk, sugar and the lemon rind in the casserole. Allow the mixture to boil for about 8 minutes stirring all the while to prevent lumps. Remove from the heat, add the eggs one after the other, then the bicarbonate and mix well. Heat some oil or lard in the frying pan. When is boils, put some spoonfuls of the mixture to fry. Cook until the fritters become golden brown, then wrap them in some oil absorbing paper and serve immediately.
Matching wine: Sweet Albana di Romagna.
