Ricotta cream


250 g ricotta,
50 g honey,
1 egg-yolk,
125 ml fresh cream,
1 lemon,
1 orange,

Recommended honey: aromatic, flower or fruit blended honey , orange honey or mountain honey.

Preparation (Medium - 15 min.):
Heat honey with some milk. Take away from the flame and pour the egg-yolk, mixing it.
When the mixture is chilled, add ricotta, lemon juice and lemon peel.
Add whipped cream, then the orange cut in small pieces.
Pour in cups and serve with a slice of orange.
