Ingredients: 

300 g ground walnuts,

300 g honey,

100 g sugar,

some sheets of wafer.

 

Recommended honey: Millefiori.

 

Preparation (Medium - 45 min.): 

Pour honey and sugar in a pan and cook on low flame for 20 minutes, blending constantly.

The mixture has to appear quite thick.

Take off from the flame and add ground walnuts.

Roll a sheet of wafer on a marble board and pour some of the mixture. Cover with another sheet and roll with the rolling pin to obtain a 4mm thickness.

Cut in diamond shapes.

Ground walnuts can be replaced with breadcrumbs, or other dried fruits.

You can blend with grated orange or lemon peel, or ground almond biscuits.
