Ingredients (for 4 people):

For the dough:
500g flour,
1 egg,
enough water to knead.

For the filling:
1kg chestnuts,
200g Bolognese mustard-like jam,
100-150g ground walnuts,
100g sweetened cocoa,
1 small glass of rum,
2 spoonfuls of icing sugar.

Preparation (difficult):
Knead the tender wheat flour with eggs and water. Roll the dough thin and cut it into squares approximately 5x5cm. Then prepare the filling. Boil the chestnuts, peel and put them in a masher. Add rum, icing sugar, finely ground walnuts and cocoa. Combine all the ingredients and place some filling in the centre of each square. Fold the dough over like for making cappelletti. Season with saba or oil and freshly ground pepper.


Matching wine:
Colli d'Imola Novello or Colli d'Imola Chardonnay.
