Braciola di castrato

 

Ingredients (for 4 people):

4 mutton chops,
1 sprig of rosemary,
3 spoonfuls of extra virgin olive oil,
salt,
pepper.


Preparation (easy):
Pound the chops slightly, place them on the soup plate and season both sides with rosemary, oil, salt and pepper. Allow the chops to rest with the seasoning for 1 hour, then grill them on coals.


Wine:
Colli d'Imola Barbera.


Utensils:

Chopping board, meat pounder, soup plate, grill.
